Ice Cream Cake

Yesterday was probably the hottest day of the summer so far in the Lower Mainland.  Thankfully, in addition to the previous Giant Cupcake, I also made my very first Ice Cream Cake.

The cake had several layers of Cookies and Cream Cake, homemade Cookies and Cream Ice Cream, and Chocolate Mousse.

It was absolutely delicious and a huge hit!  It was nice to have something refreshing when the temperature felt well above 30 degress Celcius!
