Wedding Cake

A long time friend got married today.  6 weeks ago she got engaged and planned an awesome wedding in a very short amount of time.  Shortly after they were engaged she called me to request that I make her wedding cake.  I was honoured to do so.

The cake was all German Chocolate with Bavarian Cream filling with fondant icing and accents.  The wedding was wonderful and everything went very smoothly!

"The Very Hungry Caterpillar" First Birthday Cake and Cupcakes

I love kids books.  As an elementary school teacher I think that is as expected.  Eric Carle, Dr. Seuss, and Robert Munsch are by far my favourite authors so I was thrilled when I was asked to make a cake and cupcakes for a one year old's birthday based on the Eric Carle book, "The Very Hungry Caterpillar."

I had a blast making all of the decorations and it gave me an excuse to read through the book a few times.  The cake is German Chocolate and the cupcakes are Vanilla Bean.  All decorations are handmade using fondant.  Enjoy and feel free to leave a comment for me!

Another Giant Cupcake

I made another giant cupcake today.  It took 6 hours from start to finish.  I learned today that chocolate, fondant, and buttercream icing really do not like 30 degree (Celcius) heat as the chocolate shell was melting quickly!

The cake is German Chocolate with Vanilla Bean Buttercream, a chocolate shell, and fondant decorations.  I love the little black specks of the Vanilla Bean in the buttercream!

Raspberries, Vanilla, and Chocolate!

Tonight I made a cake for a good friend of mine.  She gave birth to a precious little baby boy two weeks ago and had tried to stay away from sugar for her entire pregnancy to avoid excess weight gain and hopefully keep the size of the baby down as well.  As a result, whenever I brought baking to an event she had to pass it by.  So... tomorrow when I visit her and get some newborn cuddles, she can indulge in this cake.

It is Vanilla Bean Cake and is both filled with and topped with Vanilla Bean Buttercream and BC Fresh Raspberries and is drizzled with dark chocolate!  Looks pretty good for only taking 2.5 hours from beginning to end!

Ice Cream Cone Cupcakes

I am a teacher.  This past school year was my first year having my own class for the entire year and although it had its ups and down, it was a great year.  To congratulate my grade 7 students for moving on to high school we had ice cream sundaes on the final day of school.  I also decided to make them cupcakes to go along with the ice cream theme.  They were all so curious as to how I got the cupcake into the ice cream cone.  The extra cupcakes were also a nice treat for the stressed and tired staff members!

These are German chocolate cupcakes with cookies and cream buttercream on top.  They are baked inside of the ice cream cone and are the perfect treat for a summer party!

Three more Ice Cream Cakes

This past weekend was incredibly busy in terms of cake.  Ever since the last ice cream cake, lots of people have been asking about them and I ended up making three for the weekend.  One for a friend's birthday for Friday, one for Father's Day and my sister in law's birthday, and one for Father's Day with my family.  They were all different and they were all delicious!  Everything is homemade, including the ice cream, so rest assured there are no preservatives added.  Homemade ice cream is exponentially better than store bought!  Order an ice cream cake from me and I can prove it to you!  Take a look at my contact page for more information on ordering!

Enjoy the pictures.  I have included details as to what type of cake and ice cream was in each of them! 

1) Friday night birthday cake.  This one had layers of chocolate cake, vanilla chocolate chip ice cream, and mocha whipped cream frosting.  This has got to be my favourite frosting!





2) Sunday afternoon cake for Father's Day with my family.  This cake had chocolate cake with strawberry vanilla ice cream and whipped cream frosting.  This one was not quite as rich as the other two cakes but still delicious!  All the strawberries were farm fresh BC berries!



 
3) Sunday evening cake for my sister-in-law's birthday and Father's Day with the in-law's.  This one was a special request by my sister in law.  It had layers of cookies and cream cake, chocolate ice cream, and mocha whipped cream frosting.  This one was absolutely delicious and a HUGE hit with the in-law's!

Cookies and Cream Ice Cream Cake

I made my second ice cream cake last week for a friend's birthday.  It was a huge hit!  It included layers of cookies and cream cake, homemade cookies and cream ice cream and chocolate mousse.  This was all stacked and iced with cookies and cream buttercream!

Ice Cream cakes must be a hit right now as I have three more for this coming weekend!

Chocolate Dipped Strawberries on Chocolate Cake

This past week my brother and I made a cake for his girlfriend.  He lost a bet with her a few months back and therefore had to make her a chocolate cake.  Obviously, he enlisted me for some help.

He decided he wanted to make a German Chocolate Cake with chocolate buttercream and filled with bavarian cream.  However, he also wanted to top it off with chocolate dipped strawberries.  Let's just say his girlfriend is one lucky gal.

So... together we came up with this cake.

Chocolate French Macarons

Along with many other people, I have been hooked by the French Macarons that have been seen in many places lately.  I tried them a few weeks ago in downtown Seattle and was convinced to try to make them myself.  They are gluten free as they are made with ground almonds and no wheat flour.  This will satisfy many dessert lovers who are trying to keep gluten out of their diets.

For a first try, I would have to say that these were a success (both appearance and taste) and I am looking forward to trying several other flavours!
